Black polymer doesn't equal tacticool... plus it saves A LOT of weight.

I picked up a nice wood set for my WASR, with the dong forend, but ultimately went with the polymer. Happy I did, but have had a wood set sitting in my office for about a year. You'd think it would be easy to sell, but that is not the case.

Decide first and buy once.

You decide.  If you plan to clean it after every outing, and never plan to beat on it, then definitely go with the wood.  If you plan to go to fun shoots with it, and really beat on the rifle...then you may not want to beat up a nice wood set.

I have the same mount on my saiga. I like it.

I'd go classic. I got mine with poly and I'm about to finish swapping for wood. I did get an extra gas tube and in going to add a rail to my poly hand guard for a forward grip that I can change out when I want.

The wood stock is on now but I still need to drill the holes.

If not they sell the side mount on Amazon and a million other places. Its not expensive or difficult to mount to the receiver. And its also what belongs on the rifle. It functions like it was meant to without having to overthink anything. A Russian engineer already did the hard work for you.

Who in NJ does the conversions?

its so simple, needle nose, a drill, youtube, lighter, dental floss (method I did not use), High temp black engine paint, and some punches and its done in less than 45 min.

I wish I picked up another or two because it was fun to do.
